I take the interviews, send you a copy for your review and if you want, I create a website, mount the interview and add photographs and written accounts of your life, business or family history.

Sure you can and there are resources on this site and in the sidebar to the right that gives you all the guidance you want. I particularly recommend the Oral History Association and Story Corps (See Blogroll).
But the question is whether or not you want a guided interview by a professional who brings out the best in people and what they have to say. Communicating is something is know something about.
